Red Beans

1 lb dried red kidney beans
6-8 strips of good bacon or about 1/4 lb fat back, salt pork or a good ham bone with lots of ham still left on the bone
1 pod of garlic
salt and black pepper to taste

Soak your beans over night in 1 qt of water in a good heavy pot. The following morning, add in 1 1/2 quarts more of water, add in your cut up bacon (or the fat back, salt pork or ham bone which ever you had on hand)and garlic. Let it simmer slowly on the back of the stove for about 4 hours or until the beans are soft and the water is cooked down to a thick red sauce. Add your salt only if you need it (this depends on whether you put in bacon, fat back or salt pork) and the pepper.

Serve it over fluffy rice or in a boule.

This was traditionally made on Monday's which were wash days. You could put it on to cook and have the rest of the day to wash and clean.
