NOW, i'd bet that if you actually dug into the zip code dietary data, those zip codes tend to eat more lean meats, more fruits, more veggies, more olive oil, less vegetable oil, face lower stress, etc... all have an impact on cellular inflammation, the true cause of chronic illness (or so the data indicates - i'm always open to new direction laid out by new data).
again, an 83% reduction in diabetes is so *startling* that the mind can't process it and so tries very hard to justify it as meaningless - like the absurd idea that changing only zip codes leads to an 83% reduction in diabetes, all else being equal.
that's why harvard's joslin diabetes center recommends an anti-inflammatory diet and not a change in zip code, to treat diabetes and pre-diabetes.
that is why the AHA keeps elevating vegetables and fruits (low glycemic carbs) and down grading grains (high glycemic carbs) over time.
anti-inflammatory nutrition is leading edge science - so cutting edge that many front line doctors know nothing about it.
as an aside, i had a friend who battle sever back pain for 5 years (bad epidural followed by a car accident). she spent $10k out of pocket on imaging and was told that surgery was all that was left. she had exhausted every avenue - traditional medicine, alternative medicine, everything. she was hostile toward a dietary change but thought she'd try it b/c she was scared of the knife and the idea surgery could go bad.

elevated insulin is much more predictive than cholesterol and, in fact, elevated insulin tends to cause elevated cholesterol.
if you reduce your insulin, cholesterol tends to go down, too, BUT, much more importantly, less delta-5-desaturase is activated which, in turn, reduces the amount of cellular inflammation. |
