My Holland Grill is the black one with a stainless steel grid. It's great for many things and does cook more slowly. They have a catchy saying......"When you're lookin the food's not cookin". IT means you can't keep on lifting the lid cause it makes the cooking process lengthen. One can cook alot of things at the same time cause of the amount of surface area on the grill. I haven't tried many marinades but I have one that is my favorite and may be regionally distributed. It's a Basque meat marinade made in Madeira Ca and sold in local stores. There is a large following for this marinade so the guy that makes it isn't looking for a bigger market. I guess he has all the business he can handle.If I don't use the Basque marinade I use soy sauce with garlic cause it is truly a "can't lose" combo!! Pat
