Sometimes it helps to create the word art, hit copy, move someplace else and hit Edit->paste special -> picture, then copy the picture you just created into the table.

It has to do with the two ways that Word handles graphics. In one mode it allows word-wrap and all of that stuff and in the other mode, a graphic is treated as a single character. I much prefer the second mode since it rarely causes bizarre problems. By definition, if you draw on a page using word-art, you are in the first mode.
