Mandarin would be the likely choice since it is the "official" language in China and Cantonese is a dialect in southern China (Hong Kong, Canton) (early immigration into the US were mostly those who speak Cantonese, so you'll find the older Chinatowns and people who have been in the US for a couple of generations more likely to speak that)

The only really intelligible Chinese that I remember was in Mandarin spoke by Kaylee - I believe it was that episode that you referenced; I think she said hello. The teacher in the movie said something that sounded like stay still or sit down or be quiet.

One scene which sticks in my mind is one which, IMO clearly defines who/what Mal really is (no not THAT episode with the sadistic guy :-)). It is the one where he found out that Jayne had tried to sell out Simon and River - where the ship is rising through the atmosphere and he has Jayne in the cargo door area and he is going to leave Jayne in there with the door cracked open - Jayne was able to show some shame/humility in what he did and Mal spared him.
