Very good and detailed cookbook and really gets into ingredients and such. There is about 5 pages of alphabetically arranged ingredients and their rankings for diabetics. Absolutely not allowed, Should not be taken, Allowed but amount kept to a minimum and Allowed at will. The should not is pretty extensive to be honest. Some are a little surprising, Chinese cabbage, Bamboo shoots simmered in oil, fish gravy. In other words it almost appears that Chinese food is a real problem for a diabetic as Lindy I think it was noted with the Dr that was type 1. After this chart it does list a bunch of recipe's that are diabetic friendly.

There is an identical section for the ulcer diet.

It's really quite the cookbook which spends a lot of time on ingredients and their importance and where to find, preparation and such and then of course 1000 recipe's adapted to the American Kitchen.

If your not interested in buying the cookbook I would be more then happy to scan and email the diabetic or ulcer section or both. That would go for anyone else interested.
