I'm not sure that what you saw on Sept 5 was a doji or evening star. Sept 5 was more a doji star-like pattern which has moderate reliability, that turned into a full
evening star-like pattern on the next session. To be a real doji or evening star, the cross has to have short head and tail ie short trading range on the day the price gaps up above the white candle and forms a doji. The difference between evening doji star and doji star is that there is a black confirming candle opening below body of the doji and the profile has higher reliability
