As for a store of value - you and I are both in the arizona desert - we are very thirsty - I have a bottle of water and you have a gold coin - who has the value?

Gold coin owner. One can buy hundreds of gallons of water for one ounce of gold. Unless one is so stupid as to walk into the desert with no water supply and then buy a bottle of water for $600 !

Lets meet somewhere in the Arizona or Nevada desert ! I will give you all the bottles of water you want as long as you give me an ounce gold coin for each bottle. Hell, i will give you 100 bottles of water for 1 ounce coin !

governments have and will confiscate gold

First, they would have to hire 100,000 of $100,000 per year employees to search every basement in the country for hidden gold. Or employ military to do it. This might take years.
Believe me, most people with any significant gold holdings would transfer assets offshore or would flee the country well before this came to pass.

The small sheep will not have to have their gold confiscated by force, they will simply turn it in on government order.
Besides not many middle class members own gold, they are mostly in debt.
