There's no telling whether there will be an iPod Touch with a significantly larger capacity within the next year. It's possible, but I don't think Apple will add a spinning hard drive, due to size and the power ramifications you spoke of. Solid state storage is still just a bit too expensive to allow them to come out with a really massive Touch. As Clean said, a 64GB Touch is likely, but I wouldn't expect anything much bigger than that anytime soon.

People have speculated about some other kind of product, such as a larger "media pad" or something like that, designed for mobile gaming and watching video. That's a possibility, I suppose.

Sadly, Steve Jobs still refuses to let me know what his plans are.

One thing you can be certain of, though, is that if you wait, you will have different options than you have now.
