My wife and I celebrated our 25th anniversary in Cabo in August of this year. We stayed at the Westin Resort. The Westin is one of the more expensive choices down there, but from the very little we saw of some of the other resorts, we believe we made the right choice. Our food was better (we ate a couple of times in town), our rooms were better, our hotel services were better and our beach was as good as most of the other beaches. The negatives were that the Westin is a pretty good distance from town and there was no evening entertainment at the resort. And a beginning hurricane passed through while we were there. Cabo is heavily geared towards water sports and drinking, so we felt it was more appropriate for couples (or singles) much younger than ourselves. Land activities include horseback riding and jeep tours.
Other out-of-the-way-places in Mexico? Try Rocky Point (Puerto Penasco) near the northern part of the Gulf of California. If that's not to your liking, then we stayed at a Club Med in Cancun (which is tourist city big time), but Club Med has about 10 other resorts in Mexico, some of them in lesser known locations. Club Med is an all-inclusive resort. Some Club Meds are geared towards adults only, some towards families.
My favorite place in Mexico is Cancun, hands down, no competition. The food was mostly excellent and on a par with some of the best restaurants in the States. The Mayan ruins in Coba, Tulum and Chichen Itza were fascinating. Cozumel had excellent diving and snorkeling. And there's a place called Xcaret where you can snorkel in an underground river. There's a submarine tour you can take to see marine life on the reef. There's shopping in very modern malls like we have in the States or you can go to the older markets much like you find in the rest of Mexico. We've been to Cancun twice in the last three years. It's kind of like Hawaii on the cheap. The second time we went we stayed at Royal Caribbean (or Royal Mayan), both of which are 5 star resorts and far better than Club Med (which again seemed to be geared towards singles/couples younger than we are).
