I actually like the touch typing on screen. What I don't like is the 3 layers of virtual keyboards used to give access to all the keys of a regular keyboard. Apple could have easily shrunk the keyboard slightly to add a few missing keys and then set all the non-letter keys to shifted and nonshifted special characters. By shrinking the keyboard slightly they could also have added number keys with their shifted special characters.

Here's an image of how the portrait and landscape keyboards would look. Note that all keys from the original 3 keyboards are available in one keyboard - just like a regular keyboard.
