I called my local locker. They make beer brats and he says the only difference is when making the batch of bologna is using beer instead of the water. He would be willing to make a batch (I've never had anything other then excellent quality from these guys) but it would have to be a 20lb or 20 ring batch. I might be willing to try a few if you and your friend wanted to try it. Or if you just want to call them and order I can give you the number also. Let me know.
