Normally, they would be demanding that nothing religious be used. But since it's "multicultural," they are all for it.

You're framing this thoughtlessly. It's not about their advocating for or against religion or multiculturalism. It's about sticking up for those whose rights are being abused. If the mistreated party is atheists, then they stick up for the atheists. If the mistreated party is Muslims, they stick up for the Muslims. If the mistreated party is Christians, they stick up for the Christians.
