My understanding from the guy who runs the Citi ATMs is that they are all built around a pretty standard PC motherboard, Operating System and Browser. Obviously a lot of the hardware around it is highly customized and it takes quite a bit of development to get the PC software to control everything an ATM has to, on the other hand, you always know exactly what tasks the ATM will be used for so there is a fairly high degree of control over the environment.

The back-end is a bunch of servers of different types. Mostly it's Unix, but it also ties into the main account management software running on mainframes. From the point of view of the client (ATM) it doesn't really matter what kind of machine it is communicating with. No more than I care whether a website is hosted on a Unix or NT box.
