Well, isn't it really spices and seasonings that make ersatz foods taste like the Real Thing? If you spiced Ritz crackers like an apple pie, and added lemon juice and sugar, you would have . . . FACSIMILE FOOD!!!!

But long live perverse curiosity!!! It is my primary motivation in life, for sure. And in that spirit, this morning at the produce market I bought a huge leafy fennel bulb and the appropriate variety of potatoes to make that wonderful seasonal ragout. If I live to tell the tale, I will report back on what it tasted like.
