I tried your shrimp creole but made a few changes:

1 TB ham fat
1 cup chopped onions
1 ea jumbo fresh tomato; diced
1/2 lb okra, frozen; chopped
1 ea large green pepper; chopped
2 ea stalks large celery; chopped
1 tsp paprika
1 tsp Old Bay Seasoning; or copycat
1 cup stock or water
12 oz peeled, deveined cooked shrimp
salt and black pepper

Fry ham fat, saute peppers, onions, celery for 5 minutes until well wilted, add tomatoes, okra, stock or water and seasonings, simmer 15 minutes. Add SHRIMP and simmer 5 minutes until well heated. Serve over rice.

I think I would add bay leaves the next time although the Old Bay Seasoning kinda makes up for it. But it was fantastic! And the shrimp were the 26 count frozen ones - we took the tails off. Don't cook them too long or they will shrivel up.
