Cafeterias represent chronically inefficient (and in some cases degenerate) markets.

One can - in one particular facility I have in mind - purchase two or three simple sandwiches for $1.00 apiece, each composed of two pieces of white, wheat or rye bread; one or two slices of tomato; two or three pieces of lettuce, and a couple of slices of ham. Breaking them apart would render a lettuce and tomato salad which could be embellished by shredding the ham slices. In addition, putting the slices of bread through the conveyor belt toaster (which virtually all cafeterias leave running all day long) produces expedient croutons.

The same small salad at the salad bar would cost $4.00 or so.
