Organizing principles can explain living organisms. We are self replicating designs- we are watches that make other watches. So basically each generation we design ourselves by breeding- something watches don't do. How long it would take is not really an issue- since we don't know how long the universe has been around. I suspect the universe, or the matter of the universe, has always been. It needs no "God" behind it- it is enough to stop with the universe and the organizing principles of the universe- you can call the organizing principles (which I do not believe we understand, or may ever understand) God- but if you are imagining something along the lines of the Christian God who micro manages the affairs of men, and cares where every sparrow falls, then I think your idea is too limited.
