Excellent, Tom, I'm glad you like the pesto.

I didn't discover my favorite food till I was about 20 but have been trying to make up for the lack of childhood consumption ever since. When I found out how easy it was to make, it was clearly time to learn how to garden and produce some of the ingredients myself.

As this is garlic and basil harvest season, buy a bunch and fill a few containers with pesto and stick them in the freezer. You can freeze the basil leaves on their own but the pesto made with thawed out leaves doesn't come out as nice as pesto made with fresh leaves and then frozen.

There's nothing like pulling out some "preserved summer" to brighten up a dreary February day. Rather than chopping in fresh tomatoes like I do now when they're available, out of real tomato season I add some chopped up sun-dried tomatoes to the pasta/veg/pesto combo to add some zing, with some more grated pecorino romano on top.

Guess what I'll be making shortly for dinner...
