Before 1948, was their even an east and west Jerusalem?
You had the four quarters of the old city, Jewish, Muslim, Christian and Armenian. Plus some newer neighborhoods in West Jerusalem.

Also, if we go back to 1750, what was the Jewish/Arab in Jerusalem.

The population of Jerusalem during the eighteenth and nineteenth centuries was Jewish, Christian, and Muslim, in that order of population. So, the answer is, a Jewish plurality. Remember that Jerusalem was a town of perhaps 15,000 - 20,000 inhabitants during this period.
