I dabble in farming, and learned that some tree fruits are actually three different varieties: 1) rootstock chosen often for dwarfing, 2) trunk or interstem also chosen for growth properties and 3) the upper fruiting portion, chosen for the fruit properties. So in apples, a given rootstock might be used on a wide range of fruit, chosen based on the desired tree density in the orchard.

I think I grafted a pear to an apple and a white pine to a blue spruce.
