Yes, it seems to me that's his basis of his proscription, the ubiquity. He comes across like something is inherently wrong with wheat but has never offered any basis for that as far as I can tell. If this were Japan, he'd be on rice's case and wheat would be ignored. Sure, in our culture, if you cut out wheat products, you get the effect he wants. Unless, of course, you substitute some other grain thinking that there is something inherently wrong with wheat. There's the rub.

I have also seen him suggest that wheat is addictive, which it may be, in which case it would be inherently worse than other grains with the same glycemic load. But as far as I can tell, that's anecdotal.
