What kind of big hats? Like chef hats? I actually heard from my uncle (who was an instructor at the Culinary Institute of America) that no chef in his right mind wears those big hats (they are referred to as "mushrooms" and other more derogatory terms by the culinary set). The reason is that, especially with the advent of grilling meat on high fires, they were always bursting into flames and also had a habit of disintegrating into a gooey paper mess on one's head as one sweated, falling into one's eyes and so on. Nowadays, the only time they sometimes wear them is for ceremonial occasions.
