Assuming you don't mind having wire laying on the floor or slung up to the ceiling, you can get prefab patch cords from just about any local computer retailer. You may not get the exact lengths you mention though. For example you may find yourself with a 25' instead of 20' and a 75' intead of 60' but that's not a big problem usually.

And yes, not all rj45 cables are created equal. The key to success is that you are looking for cables that are specifically labeled as being category 5 or category 5e compliant (for your application either of these should be adequate).

If you're concerned about appearance, you can buy the cable by the foot or in bulk from places like Home Depot and run it through the walls. In this scenario you have two choices, one is to get a crimper and ends and crimp ends on the cables once they've been run (this can be a nightmare for the uninitiated so only attempt if you don't mind cutting off a few ends until you get it right). The other approach, which is the more "standard" approach is to run your cable through-wall and terminate in cat5 jacks (also avail at home depot) on both ends, then use short prefab patch cords to go from those jacks to your equipment.
