I agree with those scholars who conclude that the three instances of Jesus's departures from contemporary Jewish custom that you have mentioned are related to the urgency inherent in his eschatological project. That is, working on the Sabbath, purity laws that limited the ability to contact potential converts, and fasting on Mondays and Thursdays as the disciples of John the Baptist and apparently the Pharisees did, hindered the all important work of gathering together a body of the pious huge enough to induce God to descend.
