"At least we don't taste like chicken.."

There is an Asimov short story on the subject. It revolves around a lawyer making his opening statement to the court. He describes how the synthetic meat industry grew up and how the different competitors develop their profiles to make new tastes and textures for their various products. Apparently the process has been going on long enough so that most people are unaware that their ancestors actually ate once living creatures, and how the existing products are named in such a way as to disguise the origins of the products being sold. He explains several archaic terms that have dropped out of the language because of a shift in sensitivities, like "butcher".

Finally, he gets to the, ummm, meat of the case. He congratulates the competitor in hitting upon a model that has an uncanny appeal to the consumer. And then he introduces another archaic word. Which he starts to spell. "C" "A" "N" "N"...
