Wonderful, FAST, EZ Chicken & Rice & Veggies =
This is a terrific one that even men can do .. real ez :)
Take rice [we prefer brown or wild], put in bottom of a baking dish. Add chicken breasts .. as many as you need or will fit. Add any veggies you want on the sides {cut-up Bell or red peppers, onions, carrots, etc. all do great } Sprinkle with herbs, esp'ly. garlic, lemon pepper, rosemary, basil, thyme, or whatever you like. Can put a little butter on the top of the breasts &/or some sliced mushrooms. Add 2x the amt. of water as you've used of rice. TIGHTLY cover, w/ a lid or aluminum foil. Must be sealed tight. Bake @ 325 for 1.50 hrs.* A wonderful 1 dish complete meal.
*You can't hurt it .... if you get delayed, just turn the temp. down to 150-200, and it can stay hours longer.
All this great food .... I need to go prepare dinner.
