The Roman conquest of the Hellenistic kingdoms in the eastern Mediterranean did not erase the culture and language of those areas, which remained Greek.

I got it. I don't know that the culture was quite as Greek as you make it out to be but clearly it had a strong influence. Thanks for pointing it out to me.
