Need to convert .wav files to .mp3. Looking for advice and recommendations.

I have started routinely recording all my telephone conversations. It is legal where I live as an electronic form of note taking. It has turned out to be so incredibly useful where two parties later disagree over what was said. It is also great where I just want to recall a phone number or name with out having to ask someone to repeat themselves.

I have been archiving some significant discussions such as price quotes, tax advice or warranty promises and such. I was surprised to find my 120GB drive filling up much faster than normal. I discovered the wav files recorded with my simple phone recording solution take up MUCH more space than mp3 files.

I now have over 30 GB of mono speech audio that I think could easily be compressed and encoded into less than a tenth of that using mp3 or some other compression format.

I am open to suggestions. I do not mind paying for a solution but Google this brings up a lot of applications that all look too similar to discern the differences between the good and bad.

Also I would consider a proven application to record and log my calls automatically in a compressed format. So far it seems I have to give up my cordless phone with the ones I see. A Bluetooth headset with computer and telephone line interface would be great but I do not think such a thing exists.
