There are different types of SAM's - not all are the small shoulder-fired Stinger or Strela type used against low-flying aircraft. Most SAM's designed for high-altitude aircraft (which is what we're using) have fragmentation warheads designed to explode whenever they get within a certain distance of their target and send out a wide pattern of fragmention particles.

I don't know exactly what SAM's Iraq has but I do know they are Russian.
