Good site! I take exception to a couple of explanations.

Even a blind hog finds an acorn every now and then. (Everybody is lucky sometimes.)

This is actually a much meaner expression. It's very similar to "even a stopped clock is right twice a day." It means, "you're a fool, but by luck you happen to be correct this one time."

I do declare. (Can mean anything, but usually nothing.)

Again, this means "you're a fool."

Calling someone a fool is prohibited by the Good Book, so devout Southerners have to come up with clever ways to circumvent the prohibition.

Well, shut my mouth. (I am speechless!)

Not literally speechless. It's sort of like saying "mirabile dictu" or something like that. In shorter terms, "wow."

But as a Southerner, I would say, "well, hesh (hush) my mouth."
