You can pull the head off a chicken and a snake no knife required. My grandmother used to go into the coup and wring off a coupla chicken necks every Sunday for dinner.

Small animals are easy too. But it is even easier to leave the head intact and skin up the legs and from the back to front pulling the skin over the head.

Larger animals are not too difficult if you use a sharp blade and the correct technique and cut up along the skull line taking as little neck as possible. Cutting through the neckbones lower down (as for a trophy) is more difficult.

I assume humans are similar. The few decap videos I have seen including Berg were all done that way.
