Most of INTEL-based servers operate on the CISC (Complex Instruction Set Computer), and are 32bit. Some people think INTEL's 64bit is atleast 18 months away from launch. They may do it sooner !

SGIs high-end workstations are built based on the RISC (Reduced Instruction Set Computer), and are 64bit. 64bit architectures are also used in supercomputers. 64bit architecture is needed for advanced computational work (weather modeling, advanced military simulation, medical research, aerospace modeling, etc.). You'd normally deal with floating point operations in these research-type environments. Intel-based machines are extremely well suited for business-type operations that are "Integer-based".

Because SGI workstations can handle advanced MATH, it can also generate advanced and superior graphics. That's why you see Disney, SKG, and other entertainment giants talk about SGI.

Most high-end workstations are UNIX-based.
