Many SAP customers are using an Oracle database as the back end. When they ask SAP for help in integrating their app with the Oracle DB, they are told to find some outside help. This has really driven up the rates for consultants who have expertise in this particular area (unfortunately, I do not). It has also caused some customers to look real hard at Oracle Applications as alternatives to SAP.

As far as Financials go, I can tell you that the consulting operations of the six-pack (big six, whatever) accounting firms think that there will be alot of sites out there using Oracle Financials. The NY Oracle Users group has received several calls from recruiters looking for people with Oracle Financials experience for the accounting guys to add to their consulting staffs. One firm was looking for someone to manage it's Oracle Financials consulting business, offering a compensation package starting at $250K plus bonus.

Personally, I stick more to appliations development, but Oracle Financials experience is really in demand these days. There must be alot of people using the software.
