Days off? I don't think so. Observances during the middle ages were not reliable. After all many small towns didn't have churches- and people in less than small towns certainly didn't. And even into the 1700's and 1800's there were places where people lived in sin until a visiting preacher came by to marry them. If you lived in a town you probably got to church more often. But as for holy days- the church didn't want to miss out on it's tithes which were dependant on agriculture- so I am sure the Church in no way interfered with harvest. And most of the festivals I am familiar with that were big in the middle ages were pagan in nature.
