The middlemen have a stronghold on the beef market. They also are the ones making money...the lions share of the money in beef. The above applies to any commodity, I think. Know it does from my row crop experience. The birthing of the food chain ain't where you're going to get rich. Hadn't heard of the non fat terminology before.
