Doren -

The performance of the 3.0 GHz models will be better, of course. But even without the additional speed, a lot of people will like the idea of faster graphics cards, easier and more storage upgrade possibilities, dual optical drives, etc.

I think the new Mac Pros are pretty cool considering.

But yes, it is true that the performance increases, in and of themselves, are whelming at best. I'd like to point out that I predicted this would be the case both before and after the MacIntel announcement was made at last year's WWDC. I said something to the effect that the high-end G5s were fast enough to hold their own against Intel.
