You are better off using bus or train between cities and using scooters, motorbikes and or bicycles in the cities. That I think will expose you to the everyday Indian and let you share all the experiences he or she goes through. As far as meals are concerned, it all depends upon your tolerance to spices. You can save money by staying away from big-name hotels.
