haven't looked at anything outside of Cannon due to all the lens and accessories that I've got for Cannon EOS

I'm not about to start buying a whole new set of lenses either, so like you I've mainly looked at Canon.

But, the Sony F707 is very interesting, and points to the future possibility of having a perfect all in one pro camera, with no need to change lenses.

Great lens on that camera, can't beat Zeiss, and an all in one eliminates the danger of getting dirt on the sensor while changing lenses. I've played with the Sony, really like it, but again, shutter lag city. Can't wait to see what Sony brings out next!

I've never seen "shutter lag" as a performance metric on Cannon

I haven't either, but this is what I found:

"The D60 literature says its shutter-lag is 100 miliseconds. If my math is correct, that's 1/10th of a second. "
