Just a couple of thoughts...

Firstly both aspects, the sausage as well as the mushrooms brought back some of my best childhood memories... Grew up in the eastern part of PA, Pennsylvania coal country, and the memories of Mom making Polish Kielbasa from venison we'd bring home in the fall during hunting season come to mind as well as the part about truffle hunting... In addition to the deer hunting in the fall we'd go out hunting for wild mushrooms - Stumpys they were called. Sometimes we'd come home with 20, 30 pounds after a day in the woods. After a few outings in October we'd have mushrooms, frozen, to last the rest of the year... Wasn't quite living off the land but damn those were good times.

Second thing that comes to mind is after watching the entire clip, you get to near the end where one of the gents, the mycologist I think, is talking about how in the past you'd have to go to Europe for the truffle culinary experience and now you could just go any of a number of Portland restaurants for that same experience... Had to smile and shake my head at that one in light of recent events.
