What if he operated under the radar but, at the first instance of having to turn away a client, he did the principled thing and shut down his business rather than harm the client by turning him or her away based on group identity, would that be enough to enable you to tolerate his business practices?

My tolerance isn't the point. If he never turns away a client, then his approach isn't actual, it's just in his mind. "I don't think I'll ever massage a woman or a homosexual male" does no harm as long as it's entirely in his mind. If he articulates it to anybody, then there's harm. If he turns anybody away, then there's harm. But if by happenstance only hetersexual male clients come to him, and he has done nothing to discourage female or male homosexual clients from coming to him but they just don't happen to, then it's not a business practice yet. It's just a concept. So you're creating a false dichotomy.
