I eat goose for Christmas. It is richer than duck, has more meat (although still far less than turkey), and takes stuffing very well. We use an apple and sausage stuffing. The grease is about proportional to duck, and flows out of the bird efficiently if one is careful to pierce the skin all over with a fork........
