No one truly knows what those intra-day lows are until the day is over.

Not quite. No one know if the will be the daily lows until the day is over. But at the time the stock is at the lows for the day it is the intraday low up to that point. Consider it a trailing low. So the stock that are being short are up for the day and down from the open. This really is much easier than it sounds.
