Try putting stuffing into 20 lbs of tofu . Now there is a challenge. Actually I tend to make 3 cheese lasagna or eggplant parmagian. Some of the new soy meats have become quite tasty. There is even a pretty good vegetarian hotdog.
Funny thing is I have no friends who are vegetarian (to many mushheads and tree huggers).
My kids were raised vegetarian and all received athletic scholarships. The diet is healthy and at 53 I play hockey with people who are my son's age.
