Hi Big,
I suggest trying rakorret, and gammelost.

Rakorret is a sort of fermented trout.
Gammelost is a sharp & powerful cheese prepared in the ancient way using sour milk.
It will clear your head!
(Gammelost translates as 'Old Cheese', referring to the age of the method, not necessarily the age of the cheese. <g>)

Wash these down with aquavit.
You will be warmed!
