I eat McCann's sometimes as well as Bob"s Redmill but I don't cook it nearly as long as they say to (I think they recommend 45 minutes). I like it firmer anyway. A trick a friend told me about was to soak it overnight and then just cook it around 5 minutes. I don't know if that gives it a lower GI, but it sure cuts down the cooking time.
