The new canoes are a lot lighter than the old monsters were. Do try both, and see what you like. To get proper control a kayak has to be a fairly snug fit, and some people find it confining. Are there any paddling groups or clubs in your area? Paddlers love to talk about and show off their boats, and dropping by a gathering or two might give you a chance to try out a number of different ones and get a sense of what options are out there. A lot of specialty stores have demo models that you can try out for nothing.

Before taking a rental kayak out you should at least have instruction and practice in the "wet exit" - getting out of the boat if it capsizes. Being upside down in the water with your legs confined can be disconcerting, and even good swimmers can get a little panicky - I was the first time. One reality of the kayak is that there is some basic instruction needed before you can use one at all. Worth it, though, for those who like it.
