Schroders of London has a 135 page report on this area. Advest has written a report on Forbes Medi-Tech, a leader in functional foods,
Piper Jaffray has a report called the "Functional Food Chain" and BioScience Securities has a report called "The Creation of the Food, Health and Wellness Complex".

Also, you can look up anything on Benecol or Take Control products and there will be background information. The FDA has also commented extensively on functional foods.
