Did your mother's tapioca pudding actually taste of coffee, or was it just a tiny bit?

Because you want the pudding to thicken, it does not seem exactly a good idea to add liquid coffee after it is cooked. I might instead add instant coffee granules (or a shot of expresso) to the milk while it was heating with the sugar. Then the basic ratio of thickeners to liquid ingredients would not change.

Where does cassava grow, if you happen to know? It sounds exotic.
