Ok ... here is what I did for the 4th of July

Last nite I took a turkey [about 12 lbs] and stuffed it with green onions, garlic, apples, raisens, and purple plums.

Then T took some sautern flavoring and added it to some white wine [like a dry sherry] and added apple juice to this. I put the turkey in a plastic bag and poured the marinade over it and then tighented up the bag and put it in a bowl and stuck it back in the fridge.

In the morning I turned it over.

Well, I took the turkey out of the marinade then basted it with butter and rubbed it down with a fresh plum. STuck the plum inside and added large hunk of red onion. Then I put on some salt and pepper and stuck it in a small pan.

Got some coals going on the BBQ and put that bird in there to cook slowly. I have been basting it and rubbing it down with plums. I take the plum halves and impale them on the wings. In about 5 minutes it will be done. It is a beautiful golden brown.

I put a thermo in the bbq and tried to keep the temp around 300 degrees.

Made a Waldorf salad to go with it.

Mixed up apples - raisens and walnuts. Used mayonaisse and strawberry yogurt for dressing. Lay some lettuce leaves in a large bowl and put a whole can of cranberry sauce straight up in the center. Put the Waldorf salad around it.

Going to take this over to a friends house - where we will cook some fresh corn on the cob and eat it with french bread and some wine.
